Daca folositi ingrediente de calitate, chiar daca esti bucatar prost tot iese mancarea buna. Cand vine vorba de mancare, la italieni e mai importanta calitatea decat cantitatea.</p>

Dar daca nu gasiti nicaieri, atunci puteti inlocui guanciale cu pancetta sau speck.</li><li>Spaghetele Barilla au cel mai bun raport calitate-pret, insa daca vreti sa faceti spaghete carbonara de top, recomandam spaghetele Di Martino care sunt mult mai bune dar nu prea se gasesc la noi (<a aria-label="mai recent le-am găsit online aici (opens in a new tab)" href="https://labotteghina.ro/pastificio-g-di-martino-pasta-spaghetti.html" target="_blank" rel="noreferrer noopener" class="rank-math-link">mai recent le-am găsit online aici</a>). Di Martino au un invelis mai poros si adera sosul mai bine la ele. Sunt wow! </li><li>In loc de Pecorino Romano se poate pune Parmigiano Reggiano dar reteta autentica e cu Pecorino.</li></ul>



<p>Daca vreti sa faceti reteta originala este totusi preferabil sa folositi ingredientele autentice ca atfel apare un italian de dupa aragaz si va da cu o paleta de pizza in cap.</p>

<h3 class="wp-block-heading">Ingredientele pentru spaghete carbonara cu smântână</h3>

<p>Când ne referim la tipul ingredientelor vorbim despre tipul de spaghete (care trebuie să fie din grâu dur), ce șuncă folosim și chiar la tipul de smântână pe care îl vom folosi.</p>



<p>De exemplu smântâna trebuie să fie neapărat lichidă (sau dulce, cum îi zicem noi). Niciodată nu va fi la fel cu smântâna acră, cea pe care de regulă o punem la supe sau peste sarmale. Aici avem neapărat nevoie smântână lichidă. Ca să ne iasă mereu rețeta perfectă de spaghete carbonara cu smantana, noi folosim întotdeauna smântâna lichidă de la LaDorna, cea cu 23% grăsime (pachetul albastru). Dar și restul ingredientelor sunt la fel de importante!</p>

<p>Ei bine, le-am testat și retestat pe toate și concluzia este următoarea.</p>



<p>Bacon-ul fiert pe care îl găsim în magazin de tip șuncă nu are ce căuta în rețeta de spaghete carbonara autentică. În mod normal rețeta originală se face cu guanciale, care este falca de porc. După gustul nostru, atât guanciale cât și pancetta sunt prea grase.</p>



<p>Bine, dacă vă place ideea de grăsime multă în carbonara, atunci mergeți pe guanciale sau pancetta. Noi însă, am ajuns la concluzia că speck-ul italienesc este cea mai bună alegere pentru pastele carbonara.</p>



<p>De ce?</p>



<p>Este o șuncă crud-uscată cu mai multă carne și mai puțină grăsime, care datorită felului în care a fost preparată, dă o aromă extraordinară spaghetelor.</p>



<h4 class="wp-block-heading">So, the winner is: SPECK!</h4>



<p>Noi luăm speck-ul și parmezanul de la un magazin cu specific italienesc, cu toate produsele aduse din Italia. Dacă aveți vreun magazin de acest tip unde locuiți, vă sfătuim să luați de acolo cantitatea exactă de care aveți nevoie de speck, feliată subțire. Parmezan luați cât mai mult, niciodată nu este suficient!</p>

<h3 class="wp-block-heading">Parmigiano vs Percorino la Carbonara</h3>

<p>Atenție mare! Parmigiano Regiano este parmezanul de care vorbim în rețetă. Nu Grana Padano, care diferă atât la gust cât și puțin la textură (este o idee mai moale).</p>



<p>Găsiți Parmigiano Regiano DOP cam în orice supermarket de la noi. După cum spuneam mai sus, dacă aveți un magazin italienesc prin preajmă, luați parmezanul de acolo. De obicei este tăiat dintr-o roată mare, și este muuult mai bun, mai proaspăt și mai moluc decât cel pe care îl găsiți vidat. Demențial!</p>



<p>Rețeta originală de spaghete carbonara folosește și Percorino Romano, o brânzică maturată de oaie, asemenea parmezanului, dar o idee mai moale. Am încercat-o și noi de mai multe ori când am făcut paste carbonara, dar am ajuns la concluzia că Parmigiano Regiano este suficient și nu mai este nevoie și de percorino.</p>



<p>Dacă doriți să încercați și cu pecorino romano, eventual folosiți-l la final pentru a presăra peste paste atunci când le puneți în farfurie. Ce mai era de zis înainte să ne apucăm de rețetă? Ei, spaghetele!</p>

<p>După cum spuneam, pentru rețeta de spaghete carbonara cu smantana, spaghetele trebuie să fie grano duro, adică din grâu dur și nu din cele cu ou, care sunt foarte populare pe la noi. Deci atenție!</p>



<p>La capitolul spaghete le-am încercat pe toate, vă spunem sincer. Spaghete artizanale din Italia: Rummo, Garofalo etc. Am testat și DeCecco, despre care se zicea că ar fi cele mai bune și toate tipurile de spaghete Barilla (nr 5, 7, 3, linguine etc). Concluzia noastră este că tot Barilla nr. 5 sunt cele mai bune pentru carbonara. Deci nu vă aruncați banii pe geam cu tot felul de nebunii de paste, Barilla sunt baza. </p>



<p>Singurele spaghete care sunt mult peste Barilla și într-adevăr au un gust mult, mult mai bun sunt Di Martino, pe care noi le-am descoperit în Napoli. <p>Pe lângă faptul că e populară și hrănitoare, e și foarte delicioasă, mai ales dacă este preparată în stil autentic.</p>
<blockquote><p>Numele rețetei este derivat din &#8220;<em>carbonaro</em>&#8221; care în italiană înseamnă &#8220;<em>miner de cărbune</em>&#8220;.</p></blockquote>
<p>Asta pentru că în rețetă se folosește mult piper, care adăugat peste farfurie arată ca un cărbune sfărâmat.</p>

<h2>Cum se fac pastele carbonara în Italia?</h2>
<p>Din păcate în majoritatea restaurantelor din România veți găsi o rețetă de carbonara modificată. Adică se pune bacon sau kaizer în loc de pancetta sau guanciale.</p>

<li>Mai mult, veritabila rețetă de paste carbonara nu se face niciodată cu smântână de niciun fel, fie ea acră sau dulce. Cu smântână acră nu am încercat niciodată, dar cred că ar fi mult prea departe de rețeta originală.</li>

Nu trebuie să le stoarceți foarte bine, putină apă de la pastele făinoase ajută.
Dați focul la minim, amestecați putin și apoi adăugați 
și ouăle peste.
