<p>Recent am inventat o rețetă abosolut delicioasă de mei cu legume, o rețetă simplă de post care este gata în cel mult 20 de minute. Am făcut-o de câteva ori, am perfectat-o și am zis că e musai să o împărtășim și cu voi, mai ales că ne aflăm în postul Paștelui. Este așa de bună încât sigur veți vrea să o faceți nu doar în post, ci ori de câte ori vi se face poftă de mei. </p>

<p>Pentru noi rețeta de mei cu legume a devenit una dintre preferatele noastre, ideală atât ca și garnitură, cât și ca fel principal, alături de o salată. Simplă și absolut delicioasă. Dar să începem cu începtul.</p>

<h2 class="wp-block-heading">Ce este meiul?</h2>

<p>Meiul este o supercereală foarte nutritivă, fără gluten, pe care o mâncau frecvent strămoșii noștri dacii. Da, meiul se regăsește în bucătăria vechilor daci, alături de miere, brânză proaspătă de oaie, fructe de pădure, ciuperci, nuci, legumele precum napii sau varza și plantele sălbatice de sezon. Mi-a venit de nicăieri ideea cum că primele saramale ar fi fost umplute de fapt cu mei și legume, nicidecum cu orez sau cu păsat de porumb. Cine știe, poate o fi adevărat. ?</p>

<h2 class="wp-block-heading">Cum se gătește meiul?</h2>

<p>Meiul este asemănător cu amarantul și cu quinoa și se gătește foarte repede, chiar mai repede chiar decât orezul alb. În 15 minute meiul este gata fiert și este extrem de versatil, putând fi combinat cu orice fel de legume, și servit alături de o salată sau ca și garnitură. Gustul meiului este excepțional, iar dacă veți încerca rețeta noastră de mei cu legume de mai jos, vă veți convinge de asta.</p>

<h2 class="wp-block-heading">De unde putem cumpăra mei?</h2>

<p>Chiar dacă este o pseudocereală foarte veche, meiul se găsește rareori în marile supermarketuri, în schimb îl găsim în magazinele online cu alimente sănătoase. Noi l-am cumpărat de pe <a aria-label="Scufita-Rosie.ro (opens in a new tab)" href="https://scufita-rosie.ro/cereale/2752-mei-bio-decorticat-400-g-6426309000901" target="_blank" rel="noreferrer noopener" class="rank-math-link">Scufita-Rosie.ro</a>. De asemenea, dacă doriți ca rețeta să fie sănătoasă, vă recomandăm să o faceți cu ulei de cocos dezodorizat (fără gust și miros), deoarece este singurul ulei vegetal care nu necesită producția de bilă de către ficat pentru a putea fi digerat. Mai mult, este un antiviral și antibiotic natural. Noi îl folosim inclusiv la cartofi prăjiți.</p>

<p>În afară cele menționate mai sus, pentru rețeta de mei cu legume mai avem nevoie de câteva ingrediente simple: un morcov, un dovlecel, puțin bulion de roșii, sare și usturoi pudră. <p>Curry inseamna de fapt sos. Iar un sos poate fi de mai multe feluri, in functie de preparat, reteta si in functie de gustul fiecaruia. De aceea un curry se poate face de post, doar cu legume, si bineinteles cu pui, peste, vita, porc, chiar si fructe de mare sau alte tipuri de carne.</p>

<h2 class="wp-block-heading">Ce nu trebuie sa lipseasca din acest curry?</h2>

<p>Partea cea mai faina este ca il puteti modifica dupa gust, punand legumele pe care le doriti. Insa este important sa nu lipseasca:</p>



<ul><li><strong>cartoful</strong></li><li><strong>morcovul </strong></li><li><strong>laptele de cocos</strong></li><li><strong>pasta de curry</strong></li><li><strong>sosul de rosii</strong></li></ul>



<p>Cartoful ofera consistenta acestui curry, este baza de legume. Laptele/grasimea de cocos ii da acea grasime si aroma dementiala. Morcovul ii da dulceata, si veti avea impresia ca mancati o tocanita de porc (fara porc) ceva mai aromata.</p>

<p>Este un lapte de cocos gras, cu<strong> 67% grasime</strong> si restul apa. Cu cat laptele de cocos e mai gras cu atat curry-ul iese mai gustos. In plus de asta, nu am gasit alt lapte de cocos cu mai multa nuca/grasime, care sa nu aiba si alte prostii in el (stabilizatori, gume, etc).</p>



<p>Ar mai fi cel de la Dennree, <strong><a rel="noreferrer noopener" aria-label="aici (se deschide într-o filă nouă)" class="rank-math-link" href="https://l.profitshare.ro/l/7107093" target="_blank">aici</a></strong>, putin mai slab in grasime, dar fara alte prostii.  Da, nu este vorba de laptele de cocos slab, acela pe care il punem in lapte sau cafea. Daca folositi <strong><a href="https://l.profitshare.ro/l/8428301" target="_blank" aria-label="un lapte de cocos cu minim 60% grasime (opens in a new tab)" rel="noreferrer noopener" class="rank-math-link">un lapte de cocos cu minim 60% grasime</a></strong> este perfect!</p>

<p>Din gama asta au 4 tipuri de paste de curry, pe nivele diferite de iuteala dar si de arome: curry galben, verde, rosu si inca unul, dar nu imi amintesc. Oricare il alegeti este bun pentru acest curry de legume.</p>



<p>Noi le luam la plic, dar pe site le au la galetuta, nicio problema. Se pastreaza foarte mult si bine la frigider, dupa deschidere. Acestea sunt singurele paste de curry pe care le-am gasit noi, care sa nu aiba prostii. Da, &#8220;defect profesional&#8221; de citit etichete.</p>

<h3 class="wp-block-heading">Postul nu trebuie sa fie plictisitor</h3>



<p>Prima data cand am facut acest curry de legume am avut impresia ca avea grasime de porc in el. Asta de la grasimea de cocos, care, impreuna cu legumele chiar ii da mancarii acest gust plin si dulceag de grasime animala. Nu o sa va vina sa credeti cat este de bun pentru o reteta de post!</p>



<p>Fara alta vorbaraie, sa trecem la treaba si sa facem cel mai bun curry de legume cu lapte de cocos!</p>

<p>Noi am mâncat prima dată <strong>cartofi prajiti cu sos de branza</strong> la un restaurant mexican, aici in Cluj (Pokka Bistro). Și ne-am indragostit de ei! În meniul lor se numeau <strong>cartofi Tex-Mex</strong>. Adica o adaptare a cartofilor mexicani la bucataria americana.</p>



<p>Am mai incercat si Yummy Fries de la Baco Bell, care se apropie de acestia dar sunt mai incarcati si nu chiar pe gustul nostru. Asa ca ne-am gandit sa ne facem si noi acasa acesti cartofi mexicani cu <a aria-label="sos de branza (opens in a new tab)" href="https://l.profitshare.ro/l/8428313" target="_blank" rel="noreferrer noopener" class="rank-math-link">sos de branza</a>. Sunt dementiali de buni, usor de facut si tot la fel de usor de mancat.</p>

<p>Daca va place mancarea putin picanta, si veti respecta reteta noastra intru totul, noi zicem ca o sa va placa mult. Aveti nevoie de ingrediente putine, la fel de putina rabdare si pofta mare. <p>Ei bine, noi suntem topiți după cartofii pai (așa cum le zice prin Ardeal), în special Andrei, care îi adoră alături de un caș pane bine rumenit. Cu toții suntem de acord cu faptul că sunt absolut delicioși, nu? Dar de sănătoși&#8230;nu prea. Și asta tocmai din cauza faptului că sunt prăjiți în baie de ulei. Iar acest lucru înseamnă 2 lucruri.</p>



<p><strong>Cartofii prăjiți</strong> sunt foarte tare încărcați caloric, ceea ce nu ne prea dorim (nu-i așa, fetele?). Dar mai mult, sunt transformați dintr-un aliment complet și hrănitor într-o mâncare de tip junk-food. Adică un aliment în care raportul nutrienți/calorie este mic.</p>



<p>Astfel, se transformă într-o mâncare care nu ne hrănește din punct de vedere nutritiv, dar ne umple de calorii. Mai mult, cartofii prăjiți sunt și foarte dăunători pentru organism, cu un mare potențial de a ne îmbolnăvi. Asta datorită prăjitului în ulei, care de multe ori nu este schimbat foarte des.</p>

<h2 class="wp-block-heading">Transformăm cartofii prăjiți într-unii sănătoși</h2>

<p>Rețeta de cartofi prăjiți fără ulei am făcut-o în așa fel încât aceștia să-și păstreze gustul cu care suntem obișnuiți. În plus, îi facem nutritivi și sănătoși. Da, cartofi prăjiți fără ulei, mult mai sănătoși. Nu prea auzi des sintagma asta, nu? Ce înseamnă cartofi prăjiți sănătoși? O variantă light de cartofi prăjiți, adică fără ulei sau doar cu un strop de ulei de bună calitate, făcuți prin coacere la cuptor.</p>

<p>Ei bine, unul dintre lucrurile pe care ne preocupă cel mai tare pe amândoi, legat de mâncare, este gătitul cât mai sănătos. Fapt pentru care ne-am decis să adăugăm cât mai multe rețete sănătoase și light pe BucătăriaNoastră.ro, în perioada ce va urma.</p>

<p>A mânca sănătos poate părea o adevărată provocare în lumea în care trăim, unde zahărul în exces și alimentele super procesate fac legea. Cu asta ne confruntăm și noi, și suntem siguri că și voi! Noi vrem să facem față acestor provocări, și credem că am reușit cu rețeta de cartofi prăijți fără ulei, o rețetă simplă și sănătoasă de cartofi pai.</p>

<h4 class="wp-block-heading"><strong>1. Calorii</strong></h4>



<p>Dacă o porție mare (170 grame/6 oz) de cartofi prăjiți în ulei ajunge la 531 de calorii, din care 18% grăsimi saturate, aceeași porție de cartofii pai sănătoși are doar 156 de calorii.</p>



<p>Ce ziceți de asta?</p>



<h4 class="wp-block-heading"><strong>2. Grăsimi bune</strong></h4>



<p>Dacă mai adăugăm și o linguriță de ulei de măsline extravirgin peste ei (cum am făcut noi) tot nu depășesc 200 de calorii porția.</p>



<p>Plus că, uleiul de măsline este un ulei polinesaturat foarte bun și sănătos, indicat chiar și în dietele de slăbit.</p>



<h4 class="wp-block-heading"><strong>3. Fibre</strong></h4>



<p>Pentru un mai mare aport nutritiv, am ales să nu curățăm coaja cartofilor, deoarece în coajă se află o bună parte din fibrele cartofului. Dar acest lucru înseamnă să spălăm foarte bine coaja cartofului.</p>



<p>O perie ar fi un bun ajutor aici.</p>



<p>Fibrele alimentare sunt cele care induc senzația de sățietate mai repede, dar și reglează flora bacteriană din intestine, susținând viața bacteriilor bune pentru digestie.</p>



<h4 class="wp-block-heading"><strong>4. Sănătate</strong></h4>



<p>Cartofii pai se prăjesc în baie de ulei, adeseori refolosit, care nu doar încarcă caloric cartofii, dar îi face nesănătoși și dăunători.</p>

Dupa 20 de minute îi verificăm, iar dacă sunt bine rumeniți atunci știm că sunt gata. Dacă nu sunt încă rumeniți, îi mai lăsăm 5-10 minute pe ceas. <li>Puteți folosi orice tip de cartofi doriți, de exemplu cartofi dulci, care sunt o sursă foarte bună de beta caroten (Vitamina A) și au un indice glicemic mai mic decât cei albi, ceea ce îi face mai sățioși.</li>
<li>Mai mult, puteți foarte bine folosi și alte rădăcinoase, precum morcovi, țelină, pătrunjel, păstârnac. Asta pentru varietate și mai mulți nutrienți.</li>

<h2 class="wp-block-heading"><strong>Tipul de orez</strong></h2>

<p>Primul și cel mai important lucru este să folosiți un orez de calitate de tipul: <strong>Jasmine sau Basmati.</strong> În rețeta noastră vom folosi orezul Jasmine din Cambodgia. Acesta a câștigat <a rel="noopener noreferrer" class="rank-math-link" href="http://www.theworldsbestrice.com/indexAPRIL2016.html" target="_blank">premiul pentru cel mai bun orez</a> în anii 2012, 2013, 2014.</p>

<p>Nu încercați rețeta cu un alt tip de orez fiindcă nu se vor mai potrivi cantitățile, timpii de preparare și nici gustul nu va fi același.</p>

<h2 class="wp-block-heading">Orez Basmati sau Jasmin</h2>

<p>Pentru a procura orezul Jasmine accesați <a rel="noopener noreferrer" href="http://www.asianbucate.ro/orez/391-orez-jasmine-5kg.html" target="_blank" class="rank-math-link">acest link</a> (5kg de orez vă este suficient pentru cel puțin un an de zile). Noi vă recomandăm acest orez. </p>

<p>În cazul în care doriți să folosiți orez Basmati, cel mai bun îl puteți cumpăra de la METRO, tot la sac de 5kg. Scrie pe el METRO Quality și este pentru hoteluri, restaurante, etc.</p>



<p>Însă în acest caz rețeta se va modifica puțin în sensul că va trebui să adăugați 500ml apă în loc de 350ml cât am scris aici pentru orezul Jasmine.</p>
